Wine and food pairing

Perfect with shellfish or just-snacked scallops.
It also goes well with creamy poultry or mature goat's cheese.

Terroirs and plots

The three grape varieties typical of the appellation thrive on poor soils, mostly on limestone terraces exposed to the north wind (mistral).

Know-how

Harvested when just ripe, preferably early in the morning.

Direct pressing, followed by cold decanting in stainless steel tanks. Fermentation and ageing: 50% in large oak barrels (demi-muids) and 50% in stainless steel tanks.
